I suppose the term “low cal” is a gray area open to widest interpretation. Shall I call this kinda-low-cal instead? The cheese is there, but the refried beans (some brands contain lard or hydrogenated oils) and greasy beef ain’t got no part in it, baby.
This was Sunday football food.
- 1 bag nacho chips
- 8 ounces shredded pepper jack ((less if you prefer)
- 8 ounces shredded cheddar (less if you prefer)
- 2 jalapenos, thinly sliced
- 1 small can black beans (approx. 10 ounces), drained and rinsed
- 1 large tomato, diced
- 1 bunch fresh scallions, sliced thin
Directions: Spread nacho chips onto large cookie sheet. Evenly layer cheeses on top of chips, then add all other ingredients. Bake at 350 degrees for 10 minutes and you’re done! Alternatively, top with raw jalapenos after the nachos have baked. You get more flavor that way.

Feel free to be loosey-goosey with the recipe ingredients according to the needs/liking of your waistline. The point here is that there’s a way to occasionally enjoy “bad” foods by tweaking them to remain tasty, yet not be so terribly bad after all.
