Toasty Open-Faced Ezekiel Bread Sandwich

Enter into the splendor of the Toasty Ezekiel Bread Sammich. There’s about to be so much tasty goodness on your plate. And here’s the extra-impressive part…I made this at work using the microwave and toaster.

I have a few things tucked away in the work fridge (and freezer!) for when I forget to pack my normal lunch, so I foraged for what I had on hand and made it into something really yummy. It took me less than 5 minutes to pull the whole thing together.

EZEKIEL BREAD SANDWICH INGREDIENTS

  • Ezekiel bread from Food For Life
  • one egg
  • 1/2 avocado
  • 2-3 tomato slices
  • butter, salt & pepper

RECIPE INSTRUCTIONS

1. Toast the protein-rich Ezekiel bread and smather with a small dab of butter
2. Add one scrambled egg from the microwave (I cooked mine 50 secs)
3. Add lightly salted tomato slices
4. Top with avocado
5. Salt & pepper to taste

When Matthew saw my lunch on my Instagram page, he asked me to make it for him at home with bacon on it. As you can imagine, the bacon elevated the sandwich to an entirely other level of awesomeness. You can make can this any time of day. It’s great for breakfast, lunch or dinner. I promise you won’t be disappointed.

This easy Gourmet Mongolian Beef Ramen recipe is totally budget friendly

I fed my family real fancy for less than $10 the other night. The five of us chowed down on my recipe for Gourmet Mongolian Beef Ramen. There was even enough leftover for seconds. We’re in the middle of a kitchen renovation, so there’s little time for prepping a meal that sprawls across the countertop. And heck, fixing up a kitchen cots money (gahhh!), so we need a cheap meals right now.

I can’t wait to show you the before & after pics of the kitchen renovation once it’s done, but first we gotta get to talkin’ about this budget friendly recipe.mongolian beef ramen

Anything beyond a basic bowl of ramen should be considered gourmet, right? At least my stomachs say it is. This is totally fancy!

INGREDIENTS (serves 5-6)

  • 1-lb sliced steak meat of your choice. Whatever kind of beef slab you prefer
  • Mongolian Beef marinade (see instructions below)
  • 5 packages beef ramen noodles
  • 1 bunch green onions, chopped
  • 1 can beef broth (approximate)
  • approx. 2-3 tablespoons flour
  • approx. 2 tablespoons oil

MONGOLIAN BEEF MARINADE INGREDIENTS

  • 1/2 cup soy sauce
  • 1 cup brown sugar, packed
  • 1.5 teaspoons ginger powder
  • 2 teaspoons garlic paste or 2 cloves crushed garlic

After you have thinly sliced your beef, place it in a bowl or ziploc baggie. Pour the prepared marinade over beef, then marinade anywhere from 15 minutes to overnight, stored in fridge. I always marinade overnight to get the flavors extra tasty ‘n stuff. It should take you less than 2 minutes to throw this marinade together.

COOKING DIRECTIONS

  • Begin to prepare ramen according to package directions, or as desired. We all know how to cook ramen, right?
  • Drain excess liquid marinade from beef, set liquid aside.
  • Add approximately 2 tablespoons flour, or enough to fully coat the meat, then mix well.
  • While ramen continues to cook, add oil to pan and heat until hot.
  • Add meat to the pan and cook. Feel free to add any amount of marinade back into the pan as desired.
  • Drain cooked noodles, then add back to your pot.
  • Add the ramen flavor packets and beef broth to noodles in desired amount, and mix well.
  • Transfer noodles to each servings bowl, then top with beef and green onions
  • Now CHEW

It’s pretty much sinister for something this easy & delicious to cost less than $10 and be an instant hit with the family. Keep this one on your list of easy family dinner ideas! Now excuse me. I have to burp.

How to Get Your Free Credit Report

Gone are the days of paying $20 or more for access to your credit report. I just got done reviewing the free reports for both me and my hubby. Yup, it was free. There is no catch to this. Federal law mandates that every consumer is entitled to a free credit report from each of the three major credit reporting agencies (Transunion, Equifax, and Experian) once per year. This is how you do it:

Go to AnnualCreditReport.com and answer the security questions. You do not have to login in or create an account profile, and you definitely don’t need to provide your credit card or bank account info. You will be asked a series of securities questions, such as where you last lived or if you ever had an account with XYZ bank.

The questions are designed in a way to weed out any tricksters who might be attempting to access your information while knowing only basic information about you. For instance, one of the questions I was asked was what year my house was built. So you see, it’s very, very specific and a trickster most likely won’t know the answer to that.

Once you answer the questions, BOOM! You’re in. You can review your credit report online, print it out or save it as a PDF file. You have the option of accessing all three reports in one session, however, it might be a better idea to spread that out over the course of the year since you can only access each agency’s information once per year.

For example: access Equifax at the beginning of the year, grab your Transunion info mid-year, and then get your Experian report towards the end of the year. And remember, this is all done through the same website.

That’s it! It’s really a good idea to know what’s on your credit. There is also helpful information on the website if you need to dispute anything. Keep in mind this is for a free credit report — not access to your credit score.

If you’re not savvy with online stuff you can also call 1-877-322-8228 for your free report, or fill out this form to request it through the mail (probably the least secure way).

If you’re feeling uneasy about any of this, or if it seems to good to be true, go to the Federal Trade Commission (TFC) website that further explains everything I just told you.

Now go get that free report, baby! And remember to tell your family and friends about this.

Pepperoni Pizza Grilled Cheese Recipe

Have you tried tried Pepperoni Pizza Grilled Cheese yet? If not, what ‘da HECK are you waiting for!? Nope, it’s not exactly a winner in the healthy eats department, but the family loved it, so I am a hero ‘n stuff. Reserve this meal for those nights when you need some thing quick and simple, or when you’re feeling too darn lazy do anything fancy in the kitchen… which is me on most weeknights. Ugggh! 

Gracie went all googley-eyed over the grilled cheese goodness. It really is a great meal. You ready to make it?

This is extra-perfect because it’s made with some staple ingredients you might already have in your kitchen. I personally don’t eat much cheese, but we always keep cheese and sauce in the house. Butter is no-brainer, of course. As for the other ingredients, I did have to fetch them at the store. Now go fetch yours…

INGREDIENTS

  • 1-2 boxes garlic Texas Toast (depending on how many sammiches you plan to make)
  • Small can of pizza sauce
  • Sliced pepperoni
  • Shredded mozzarella
  • Butter

DIRECTIONS

  1. Cook Texas toast in oven according to package directions. Be careful not to overcook.
  2. Prepare bottom toast slice by topping in this order: 1-2 tablespoons sauce, shredded cheese, pepperoni
  3. Top with second piece of toast.
  4. Prepare pan or griddle with butter, and cook as you would a normal grilled cheese sammich.
