I’m dishing out the tough love today. I hope you’re ready for it. Do you get ticked off when people let you down. Are you disappointed when people don’t honor their commitments and promises to you? Now ask yourself this: you are dropping the ball on the commitments you promises you make to yourself? Do you get wishy-washy and lack follow through? Watch the video and give yourself an honest self-assessment. Here is your kick in the pants for you to raise the bar. It’s time to achieve more. Do it for yourself.

Waffle House Waffles Recipe. OMG! They’re so good!

I crawled out from the covers on Saturday morning, complete with wild bed hair and stank morning breath. And then it happened. It happened almost immediately and without hesitation. My stomachs began to quiver with longing to be back at Waffle House gobbling up the All-Star Special. In particular, I wanted those Waffle House waffles.

Awww yeah! Earlier today…I fasted until noon and then went to Waffle House with the hubs for a weekend splurge meal. Our 13 year anniversary is tomorrow. 🍳 #intermittentfasting #fasting #weightlossjourney #beforeandafter #breakfast #waffles #wafflehouse

But alas! My mind had a genius idea. I can make these dang things at home. And can you, too. I had great success whipping up a batch of knockoff Waffle House Waffles. They taste just ohhh so delicious and are very, very close to the infamous Waffle House recipe.

Matthew was impressed. He gave these waffles an 8.5 out of 10 on the Knockoff Scale. Your belly will be full of joy if you make this. Go on. Make some for your hungry family and impress them, too. I insist.

Copycat Waffle House Waffles Recipe

Adapted from recipe as seen on Food.com. We've switched out an ingredient or two, and doubled the batch to yield 9 delicious waffles. Feed your hungry crew or halve all ingredients for a smaller batch. If you any leftover batter, simply save it dinner. Yesss. Waffles for dinner! Because why not?
Ingredients
  • 3 cups all purpose flour
  • 2 tsp salt
  • 1 tsp baking soda
  • 2 eggs
  • 1 cup white sugar*
  • 4 tbsp melted butter
  • 4 tbsp vegetable oil
  • 1 cup half-and-half
  • 1 cup milk
  • ½ cup buttermilk (use additional half-and-half if you do not have buttermilk)
  • ½ tsp vanilla
  • *If you desire to use malted milk powder to the recipe, reduce the amount of sugar. For example: Instead of 1 cup sugar use ½ cup sugar + ½ cup malted milk powder. Or use ¾ cup sugar + ¼ cup malted milk powder. It's up to you.
Instructions
  1. Combine dry ingredients in medium mixing bowl (flour, salt, baking soda) and set aside.
  2. In a separate bowl combine eggs, sugar, melted butter and vegetable oil.
  3. Add the following to the egg mixture: half-and-half, milk, buttermilk and vanilla.
  4. Combine all ingredients and mix thoroughly until no longer lumpy.
  5. Brush preheated waffle iron with vegetable oil.
  6. Scoop out slightly less and ½ cup batter and pour onto the waffle iron. Use more or less batter, depending on your iron and serving preference.
  7. Cook waffles 2-4 minutes to your preference. Cooking times will vary depending on your waffle iron.

Easy Black Bean Burger Recipe. It’s delicious!

Beans, beans, they make you fart. Heheheeee. But I swear to you, this Easy Black Bean Burger didn’t make me gaseous.

If you’re craving a delicious, satisfying burger, but you also need to keep an eye on your calorie intake, then sink your hungry chompers into this vegetarian black bean burger. It’s flavorful and filling, and ready in less than 15 minutes!

Serves: Up to 9 4-inch patties, or 6-7 thicker patties
 
Ingredients
  • 3 cans Goya black beans (15-oz size)
  • 1 small onion, diced
  • 3 eggs
  • 2¼ cups seasoned panko breadcrumbs
  • Butter & olive oil for pan frying.
  • Spices:
  • ¾ tsp Salt
  • ¾ tsp Pepper
  • ¼ tsp Garlic Powder
  • 1 tsp Chili Powder
  • Optional But Recommended Spices:
  • ½ tsp Smoked Paprika
  • ½ tsp Cumin
Instructions
  1. Dice onions and set aside.
  2. Drain beans but DO NOT rinse.
  3. Mash & smash beans, then add onions and spices.
  4. Taste your mixture to be sure you’re satisfied with flavor profile BEFORE adding the eggs.
  5. Add eggs & stir thoroughly.
  6. Slowly add breadcrumbs until the recommended consistency is reached. The mix should be able to form a patty that holds together but is not too dry. It will be a bit sticky before cooking.
  7. Add half butter, half olive oil to pan. Cook your burger a few minutes on each side until nicely browned.
  8. Add your favorite toppings and enjoy.

Don’t forget to add a nice, soft bun. No dried up, crumbling stale buns are allowed. But, seriously, you can still make this even without a bun. Lightly toast up two slices of bread and you’re all set. Now dig into this black bean burger, for goodness sake. Go make it right now!
