Booyah! I’m on a roll with this weight loss maintenance stuff. I’ve kept the weight off for an entire year. Yes, there have been ups and downs, and I expect there always will be since perfection is not my goal (and also because I love Cinnabon too much. heheheheee). But overall I’ve learned through trial and error what works to stay lean for the long term, and what thresholds of greediness can be enjoyed without going over the top and wrecking all your good progress.

OTHER IMPORTANT WEIGHT LOSS MAINTENANCE FACTORS

  • Yep, I still do intermittent fasting – it’s been over 3 years now. I fast 5 times per week, Monday through Friday, and enjoy a few splurges on the weekends.
  • Hydration is so darn important. But nope, I don’t go by that 8 glasses per day rule. I’m just sure to sip all day long. This includes drinking a glass of water containing Bragg’s Apple Cider Vinegar first thing in the morning on an empty stomach.
  • Proper sleep is essential. You never know how bad your sleep is until you actually get the proper amount of rest. I had been wearing myself thin on sleep, but I’m finally back to around 7 hours per night. This is has made a big difference in my energy for my morning workouts.
  • I’m eating less carbs — finally found that perfect balance! My Easy Paleo Pancakes are one way I’m still enjoying my favorite foods while reducing my carbs. Cutting out excess carbs has made a big difference in my mid-section!
  • Less cardio and more strength training. Cardio does not give you beautiful curves or a nice, lifted but. You gotta strength train for that.
  • Make yourself a priority. You cannot give all of yourself and become a dry well.  Take care of YOU!

Easy Paleo Pancakes Recipe. Low Carb Goodness!

It’s Paleo Pancakes time! But if you had told me a few months back that I would give up my regular pancakes forever for this (weird?) paleo stand in, I would’ve laughed in your face and proceeded to cover my body in high carb white flour in an act of rebellion.

paleo baking mixBut whoa. Most white flour foods hurt my belly now, including the average pancakes, which bloat me terribly. It was time to find an alternative to replace the white flour foods that give me grief.

Everything lined up perfectly, as I ran across Paleo Baking Flour just after making that decision. I was hesitant at first because the mix costs more than normal flour (the mix is a blend of almond flour, coconut flour, arrowroot starch and tapioca flour), yet I’m all for it now with no qualms at all, because it’s just what I needed.

But what exactly does Paleo mean?

Paleo is eating with a caveman mindset for the sake weight loss and staying fit. The focus is on meats, veggies, fish, nuts, seeds, and anything else you can hunt and gather as opposed to eating grains. This makes white flour a huge Paleo no-no. Although I don’t follow a Paleo diet per-se, the Paleo concept regarding flour has helped to keep my belly from hurting.

So yes, I am most definitely in love with my Paleo Pancakes using Bob’s Red Mill. It’s a convenient way to whip up pancakes, muffins, waffles, cake, cookies, pizza crust and other floury things that you love.

Paleo Pancakes Recipe

Feel free to use any kind of sweetener you choose, but try to keep it as healthy as possible. These pancakes are low carb and also meet the requirements for a keto (ketogenic) diet.

Bob's Red Mill Paleo Pancakes
Recipe by: Bob's Red Mill
Recipe type: Breakfast
Prep time:  3 mins
Cook time:  7 mins
Total time:  10 mins
Serves: 4-6 small pancakes
 
Ingredients
  • 1 cup Paleo Baking Flour
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • ⅓ cup non-dairy milk or water (I used almond milk)
  • 1 tbsp melted coconut oil
  • 2 tsp honey or maple syrup (I used sugar in the raw)
  • ½ tsp vanilla extract (I eyeballed it and added more)
Instructions
  1. Prepare wet and dry ingredients in separate bowls, then mix altogether.
  2. If batter is too thick, add more non-dairy milk/water to desired consistency
  3. Heat pan to medium and add butter
  4. Cook approximately 3-4 mins on each side.
  5. Enjoy your pancakes!

These pancakes were a hit with my entire family. Not one of them bitched a fit with complaints about the taste or texture. Paleo pancakes are very easy to enjoy. There’s no reason for me to go back to eating the white flour stuff again…ever.

Naan Bread Pizza for Weight Loss (With 5 Minute Homemade Pizza Sauce)

Hey guys. This is it! The is THE PIZZA I ate 3-4 times per week during my 8 week body transformation. Even as I write this I am ready to hit up the grocery store again for some more Naan bread. I’m making Naan bread pizza again for dinner tonight!

Naan is an Indian flatbread that is perfect for pizza-making. Although it resembles a pita, Naan is way more delicious and has proven to NOT bloat me like other breads can do. I choose to NOT add cheese to this pizza for the sake of my weight maintenance, but feel free to build this pizza any ‘ole way you wish and add any toppings you darn well please.

Naan Bread Pizza for Weight Loss | With Homemade Pizza Sauce
Recipe by: Yum Yucky

Prep time:  10 mins
Cook time:  12 mins
Total time:  22 mins
Serves: 2-4
 
Ingredients
  • Garlic Naan Bread
  • 1 whole tomato per Naan (cut each tomato in half)
  • 1 garlic clove per Naan
  • Spinach
  • Sliced Mushrooms
  • Sliced Red Onions
  • Other toppings of your choice
  • Olive Oil, Salt, Pepper, Italian Seasoning
Instructions
  1. Begin by preparing tomato sauce: Grate the tomato halves using a cheese grater, then set aside.
  2. Crush the garlic cloves.
  3. Add olive oil to the pan and sautee' the crushed garlic on low heat for 1-2 minutes.
  4. Add tomato sauce to the pan and simmer for an addition minute or two while sprinkling in salt, pepper & Italian seasoning to taste.
  5. Transfer sauce onto each piece of Naan.
  6. Add your desired toppings to the Naan.
  7. Bake Naan in 425 degree oven for approximately 10-12 mins, or to desired done-ness (yup, I said "done-ness")

Waffle House Waffles Recipe. OMG! They’re so good!

I crawled out from the covers on Saturday morning, complete with wild bed hair and stank morning breath. And then it happened. It happened almost immediately and without hesitation. My stomachs began to quiver with longing to be back at Waffle House gobbling up the All-Star Special. In particular, I wanted those Waffle House waffles.

But alas! My mind had a genius idea. I can make these dang things at home. And can you, too. I had great success whipping up a batch of knockoff Waffle House Waffles. They taste just ohhh so delicious and are very, very close to the infamous Waffle House recipe.

Adapted from recipe as seen on Food.com. We've switched out an ingredient or two, and doubled the batch to yield 9 delicious waffles. Feed your hungry crew or halve all ingredients for a smaller batch. If you any leftover batter, simply save it dinner. Yesss. Waffles for dinner! Because why not?
Ingredients
  • 3 cups all purpose flour
  • 2 tsp salt
  • 1 tsp baking soda
  • 2 eggs
  • 1 cup white sugar*
  • 4 tbsp melted butter
  • 4 tbsp vegetable oil
  • 1 cup half-and-half
  • 1 cup milk
  • ½ cup buttermilk (use additional half-and-half if you do not have buttermilk)
  • ½ tsp vanilla
  • *If you desire to use malted milk powder to the recipe, reduce the amount of sugar. For example: Instead of 1 cup sugar use ½ cup sugar + ½ cup malted milk powder. Or use ¾ cup sugar + ¼ cup malted milk powder. It's up to you.
Instructions
  1. Combine dry ingredients in medium mixing bowl (flour, salt, baking soda) and set aside.
  2. In a separate bowl combine eggs, sugar, melted butter and vegetable oil.
  3. Add the following to the egg mixture: half-and-half, milk, buttermilk and vanilla.
  4. Combine all ingredients and mix thoroughly until no longer lumpy.
  5. Brush preheated waffle iron with vegetable oil.
  6. Scoop out slightly less and ½ cup batter and pour onto the waffle iron. Use more or less batter, depending on your iron and serving preference.
  7. Cook waffles 2-4 minutes to your preference. Cooking times will vary depending on your waffle iron.
