It’s Paleo Pancakes time! But if you had told me a few months back that I would give up my regular pancakes forever for this (weird?) paleo stand in, I would’ve laughed in your face and proceeded to cover my body in high carb white flour in an act of rebellion.
But whoa. Most white flour foods hurt my belly now, including the average pancakes, which bloat me terribly. It was time to find an alternative to replace the white flour foods that give me grief.
Everything lined up perfectly, as I ran across Paleo Baking Flour just after making that decision. I was hesitant at first because the mix costs more than normal flour (the mix is a blend of almond flour, coconut flour, arrowroot starch and tapioca flour), yet I’m all for it now with no qualms at all, because it’s just what I needed.
But what exactly does Paleo mean?
Paleo is eating with a caveman mindset for the sake weight loss and staying fit. The focus is on meats, veggies, fish, nuts, seeds, and anything else you can hunt and gather as opposed to eating grains. This makes white flour a huge Paleo no-no. Although I don’t follow a Paleo diet per-se, the Paleo concept regarding flour has helped to keep my belly from hurting.
So yes, I am most definitely in love with my Paleo Pancakes using Bob’s Red Mill. It’s a convenient way to whip up pancakes, muffins, waffles, cake, cookies, pizza crust and other floury things that you love.
Paleo Pancakes Recipe
Feel free to use any kind of sweetener you choose, but try to keep it as healthy as possible. These pancakes are low carb and also meet the requirements for a keto (ketogenic) diet.
- 1 cup Paleo Baking Flour
- ¾ tsp baking soda
- ¼ tsp salt
- 2 eggs
- ⅓ cup non-dairy milk or water (I used almond milk)
- 1 tbsp melted coconut oil
- 2 tsp honey or maple syrup (I used sugar in the raw)
- ½ tsp vanilla extract (I eyeballed it and added more)
- Prepare wet and dry ingredients in separate bowls, then mix altogether.
- If batter is too thick, add more non-dairy milk/water to desired consistency
- Heat pan to medium and add butter
- Cook approximately 3-4 mins on each side.
- Enjoy your pancakes!
These pancakes were a hit with my entire family. Not one of them bitched a fit with complaints about the taste or texture. Paleo pancakes are very easy to enjoy. There’s no reason for me to go back to eating the white flour stuff again…ever.
If you haven’t tried alternative flours yet in your baking and cooking, do yourself and favor and go for it! Keep your eyeballs peeled for Paleo Baking Flour at your grocery store, or shop for it now on Amazon.
Those do look good, and i’m glad you found something to replace the wheat that is so bloating. It’s good to see you here again!
Hi mimi. I’m going to have these pancakes again tonight. I love them so much!!
I didn’t know Bob’s had “Paleo” flour that mixed all those flours together! Interesting. I’ve had the egg/banana/cinnamon Paleo “pancakes” before, but never made ones with alternative flours. Is it still Paleo if I douse in syrup 😉
I guess good ol’ Bob can’t control what happens after we actually cook the pancakes. I’ve been using maple syrup on mine. I have tried the egg/banana/cinnamon thing but I didn’t like it. I really tried sooooo hard to like it. lol.
this is GREAT! I’m a pancake lover and although I’m not on the paleo I am carb cycling and trying to stay away from flour as well. Like you, I’m bloating BAD when I eat that junk now! I’m excited to try this!
Hey brandy. I’ve been eating these pancakes about once a week with pure maple syrup (for about a month now), and there’s been no bloat at all! I suspect you’ll have the same result. I just bought my first bag of coconut flour so I’m going to see what else yummy I can make. Enjoy your pancakes!
Once it is pancake recipe i am in. I am a big pancake lover. i will definitely try this recipe..
I am totally trying this! thanks for sharing the recipe.
I am not on the paleo diet, however I have tried eating high protein foods in the morning time. Recently it has been just a couple of eggs and a few strips of bacon BEST WAKEUP EVER!!!
My life is complete now. I’m a pancake LOVER! Now I don’t have to worry about all the extra calories. I just have to control myself with the butter and syrup.
