Cheesy Spinach Melt: No Excuses Healthy Breakfast in Only 3-Minutes

If you’re short on time for breakfast, yet very serious about your body transformation, you need to be thinking outside the breakfast cereal box and/or fast food drive thru for the “healthiest” thing you can find on the menu.

My recipe for the Cheesy Spinach Melt is cooked in the microwave and done in only 3-minutes (including prep time). Make it at home or pack up the ingredients, take it to work, and cook it up there like I did. If you tell me you don’t have time to eat healthy, you bettah be thinking again.

Ingredients:

  • 2 Eggs
  • very huge handful of fresh spinach leaves
  • sprinklings of the Extra Sharp Cheddar cheese

Directions:

  • Crack eggs into microwave safe bowl and beat ‘em up.
  • Heap in your very huge handful of spinach leaves and mix it around. Make sure all of the spinach is saturated by the egg mixture.
  • Place bowl in microwave and cook for 2-minutes. (adjust time if necessary, depending on your microwave)
  • Take bowl out, add your sprinklings of Cheddar cheese (but don’t be too greedy with the cheeses), then return to the microwave for 15-seconds of cheesy melting-ness.
  • That’s it. You’re done. Now eat it up.

Ooo-la-laaa! It was delicious.

So I don’t wanna hear about you eating crap for breakfast (including bagels) because you didn’t have time for something better. Your body transformation requires you to make time. Even if it means you have only 3-minutes to spare, you can eat healthy with the Cheesy Spinach Melt.

The other fun thing about that meal is being able to smile at co-workers with spinach in your teeth. BTW I received my Pump today and everyone at my office is coveting my new toy. We’ve even watched one of the workouts!

OK challenge for you- healthy breakfast when you can’t have gluten egg or dairy. Like all my food must also be portable and be ok out of the fridge for 2 – 5 hours! Teaching 9am classes and still getting to the gym bites some times!

@yumyucky, Banana and the lowest sugar highest fibre gluten-free muesli bar I can find. Oh and a handful of nuts if I have time, if not they are snack after class!

Proven fact – people that eat breakfast lose more weight than those who don’t.  You metabolism is at it’s highest [burn more calories] and it keeps you from snacking later in the day if you were to skip it.
 
My kids don’t make it out of the house without breakfast – and I am so darn hungry when I wake up you can bet your boots I am chowing on something.
 
[True - I had a 1/2 grilled cheese sandwich, 1/2 cup homemade tomato soup and 2 scoops of butter pecan ice cream for breakfast today.  It was what I was craving and I was using up lefotvers. heehee - so good.]

I have grown to love microwave eggs. Well not love, but definitely like them for their minimal effort and fast cooking time. Works out great on weekday morning when my time is super short. Thanks for this twist! I will definitely be trying it soon.
