Put a paper towel in a collander, and turn the carton upside down in the lined collander over the sink. Let it drain for a day, or until you like the consistency. The bitter whey (along with a lot of carbs) will drain out, leaving the yummy part. As it drains more and more, it turns into yo-cheese! My fave yoggie is with lots of good (antioxidant!) cinnamon, a bit of vanilla. and lightly sugared. The yo-cheese is awesome with garlic, chives, herbs, and other dippy-type flavors, spread on crackers as hor&#039;dourves.
